Preparation
Kitchen utensils
2 Pots, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Tablespoon, 1 Wooden spoon, 1 Sieve, 1 Can opener
Preparation steps
1.
In a medium saucepan set over medium heat, combine water and sugar. Stir constantly, until the sugar dissolves. Bring to boil. Remove from heat. Chill syrup until completely cooled.
2.
Meanwhile, mash 3 cups raspberries in a medium bowl. Stir in the lemon juice. Mix in chilled sugar syrup. Pour mixture through mesh strainer, pressing on solids to extract as much liquid as possible.
3.
Pour mixture into shallow baking dish. Freeze until almost firm, about 2 hours, stirring frequently.
4.
Continue freezing without stirring until firm, at least 3 hours or overnight.
5.
Using fork, scrape the surface of the granita to form crystals. Scoop crystals into dessert glasses. Garnish each serving with a dollop of yogurt and a skewer threaded with raspberries and lemon curls.
