- 6 sprigs Basil
- 4 sprigs parsley
- 2 Tbsps scallions
- 4 sprigs mint
- 4 sprigs Tarragon
- 2 Tbsps White vinegar
- 2 Tbsps lemon juice
- 5 Tbsps olive oil
- 2 Tbsps butter
- Sea salt
- peppers (freshly ground)

Preparation steps

Rinse the basil, parsley, mint and tarragon, pat dry and pluck off the leaves. Coarsely chop and mix with the chives, vinegar and olive oil. Season with salt and pepper to taste.

Rinse the cod and pat dry. Season with salt and pepper to taste. Melt the butter in a skillet. Add the cod and sear until golden brown, about 3-4 minutes per side. To serve, divide the fish between warm plates and drizzle with the vinaigrette.
