1 ½ kilograms Fish (such as sea bream, gutted and scaled)
6 Limes
2 small ripe Tomatoes
6 garlic cloves
2 allspice
1 bunch scallions
2 Tbsps chopped flat-leaf parsley
1 sprig thyme
4 Tbsps vegetable oil

Preparation steps

1.

Squeeze the juice from 4 limes. Season the fish with salt and pepper and sprinkle with lime juice. Crush 1 allspice berry in a mortar and sprinkle over the fish. Cover and marinate the fish for 30 minutes. Rinse the tomatoes, blanch in boiling water, peel, cut in half, remove the stems and cut into small pieces.

Trim the scallions, rinse and chop. Peel 5 garlic cloves and mince. In a wide pot, heat 3 tablespoons oil, add the parsley, scallions, thyme and garlic and cook briefly. Add the tomatoes and simmer over low heat for 2 minutes.

Add the fish, cover and simmer for another 3 minutes. Turn the fish over, add enough hot water to just cover the fish, add the remaining allspice berry and simmer for 12 minutes.

Squeeze the juice from the remaining lime and mix with the remaining minced garlic and 1 tablespoon oil. Drizzle the fish with the lime-oil sauce and serve with rice or banana, if desired.
