Scrambled Eggs with Baby Spinach
Eggs are a great source of protein and healthy fats. The protein comes from the egg whites and the fats come from the yolk. Combined with spinach, this is a perfect way to start your day!
If you want this recipe to be lower in calories and fat, replace the whole eggs with just egg whites.
Whisk the eggs with the milk until light and frothy. Season with salt, pepper, and nutmeg. Heat the olive oil in a non-stick pan and pour in the eggs.
Scramble the eggs by repeatedly moving a spatula from the edge of the pan to the center. Rinse the spinach and cut into thin strips. Fold the spinach into the eggs just before serving.
