- 1 ½ Tbsps olive oil
- 1 onion (finely chopped)
- 2 cloves garlic cloves (minced)
- 2 sticks Celery (finely chopped)
- 1 tsp paprika
- 4 cups canned, chopped Tomatoes
- 1 ½ cups gluten-free vegetable stock
- 3 ⅓ cups Herring (cleaned, pin-boned, and chopped)

Preparation steps
1.
Heat the oil in a saucepan set over a medium heat until hot. Add the onion, garlic, celery, and a pinch of salt, sweating for 5 minutes until softened.

Stir in the paprika, chopped tomatoes, and stock. Bring the stew to a simmer, and then reduce the heat to low.
3.
Stir the herring fillets into the stew. Cook gently for 25 - 30 minutes, stirring occasionally, until thickened.
4.
Season to taste with salt and pepper. Ladle into bowls and serve.
