2 cups Rye bread
cup milk
3 Tbsps butter
3 shallots (finely chopped)
1 bunch parsley (chopped)
2 eggs
breadcrumbs (if necessary)
2 carrots (sliced)
6 cups Mixed Mushrooms (e. g. chanterelles, button mushrooms... ), sliced
lemon zest
cup cream
1 ⅔ cups vegetable stock (or meat stock)
2 Tbsps Crème fraiche
1 tsp flour
salt
freshly ground peppers
Nutmeg (ground)

Preparation steps

1.
Put the diced bread into a bowl. Heat the milk, pour over the bread and leave to stand for about 10 minutes.

Heat 1 tbsp butter and sweat half of the shallots until soft. Add half of the parsley and remove from the heat. Add to the soaked bread with the eggs and mix. Season well with salt, pepper and nutmeg.

If the mixture is too soft add some breadcrumbs. Form into dumplings and cook in boiling, simmering water for about 18-20 minutes.

Heat the rest of the butter and sweat the remaining shallots and carrots. Add the mushrooms and lemon zest, and cook together for a couple of minutes.
5.
Dust with flour, then add the cream and stock. Simmer for about 5 minutes.
6.
Finally add the crème fraîche and season to taste with salt, pepper and nutmeg. Serve on to plates, add the dumplings and sprinkle with parsley.
