Stud the onion with the cloves. Put into a pan with the milk, spices and bay leaves and heat very gently until the milk comes to a boil.
Remove from the heat, cover the pan and leave to stand for 4-5 hours. Strain the milk into a bowl and return to the pan.
Add the breadcrumbs and heat very gently for 15-20 minutes, stirring occasionally, until the breadcrumbs have swollen. Beat well until smooth.
Stir in the cream and butter until piping hot. Season to taste with salt and pepper just before serving.
