180 grams starchy potatoes

180 grams Pastry flour
1 ½ tsps Baking powder
2 eggs
60 grams softened butter
250 milliliters milk
butter (for the waffle iron)
50 grams smoked Bacon
1 Lettuce
2 Tbsps chopped parsley
2 Tbsps Vinegar
2 Tbsps sunflower oil

Preparation steps

1.

Rinse the potatoes thoroughly and cook in a pot of  boiling salted water until knife-tender, 25-30 minutes. Peel, let the water evaporate and press through a potato ricer.

In a bowl, mix the flour with the baking powder and 1 pinch of salt. Stir in the eggs, butter and milk until smooth. Stir in the potatoes.

Heat the waffle iron and brush with butter.

Pour 2-3 tablespoons of batter into the waffle iron and cook according to manufacturer's directions until golden brown. Cut the bacon into thin strips.

5.

Meanwhile, rinse the lettuce and tear into bite-sized pieces and toss with parsley, vinegar, oil and sugar, season with salt.

6.

Divide the salad among plates and top with the waffles and bacon. If desired, serve garnished with onions and small pickles.
