1.333 cups floury potatoes
1 ⅛ cups Crème fraiche
2 Tbsps lemon juice
½ tsp lemon zest
1.333 cups smoked Salmon (4 good slices, the rest cut into fine strips)
1 handful Dill (finely chopped)
1.333 cups all-purpose flour
1 ½ tsps Baking powder
2 eggs
¼ cup softened butter
1 cup milk
butter (for the waffle iron)

Preparation steps

1.
Boil the potatoes, without peeling, in salted water for 20-25 minutes until fork-tender.

Mix together the crème fraîche, lemon juice and zest. Stir in the salmon strips and the dill and season with salt and ground black pepper.
3.
Drain the potatoes and allow the steam to evaporate. Peel and press through a potato ricer.
4.
Mix the flour with the baking powder and a pinch of salt. Add the eggs, butter and milk and mix to a smooth batter. Stir in the potato.
5.
Grease the waffle iron and heat up. Add 2-3 tbsp of the batter and fry golden brown waffles one after the other. Top with a dollop of crème fraîche mixture and serve garnished with the salmon slices.
