350 grams Pastry flour
½ tsp salt
1 pkg Baking powder
½ tsp sweet ground paprika
1 tsp dried herbes de Provence
150 grams freshly grated Parmesan
200 milliliters Buttermilk (more as needed)
2 eggs
5 Tbsps olive oil
80 grams diced ham
12 Paper baking molds

Preparation steps

1.

Combine the flour, salt, baking powder, paprika and herbs. Stir in the grated cheese, buttermilk, eggs, ham and oil. If the batter is too dry add some more buttermilk.

2.

Line each well of a muffin tin with 2 paper baking molds and fill with the batter.

3.

Bake in a preheated oven at 200°C (approximately 400°F) for about 20-30 minutes until a toothpick comes out clean.

4.

Cool briefly in the tin and then transfer to a wire rack to cool completely. Then serve.
