200 grams button Mushroom
80 grams smoked ham
1 Tbsp thyme
225 grams Pastry flour
1 tsp Baking powder
1 tsp baking soda
salt
80 milliliters olive oil
125 milliliters Buttermilk
2 eggs
freshly ground peppers
40 grams grated Cheese
fresh thyme (for garnish)

Preparation steps

Preheat oven to 160°C (approximately 325°F).

Rinse mushrooms. Set 3 aside and cut remaining mushrooms into small pieces. Mix with diced ham and thyme. Mix flour, baking powder, baking soda and 2 pinches of salt together. Add olive oil, buttermilk and egg. Season with pepper, stir in cheese and then mushroom-ham mixture. Line wells of a muffin tin with paper liners. Pour batter into liners and bake for 25 minutes. Muffins are done when toothpick inserted in center comes out clean.

Cut reserved mushrooms into thin slices. Remove muffins from oven and garnish with sliced mushrooms and fresh thyme. Serve muffins warm.
