- 1 onion
- 3 Tbsps vegetable oil
- 14 ozs carrots
- 10 ozs Cherries
- salt
- freshly ground peppers

Preparation steps
1.
Cut chicken into bite-sized cubes. Peel and slice onions and carrots. Rinse cherries and pat dry.
2.
In a pan, cook onion in oil until translucent. Add chicken and carrots. Cook, stirring occasionally, about 6 minutes. Add cherries and cook 2 minutes more. Season with salt and pepper and divide among plates.
