Preparation steps

1.

Scrub potatoes thoroughly and cook in salted water for about 30 minutes. Drain, rinse and halve, scoop out pulp carefully, leaving some pulp on shells. Keep potato shells warm in preheated oven at 70°C (approximately 150°F). Cut potato pulp into small cubes and heat 1 1/2 tablespoons of butter in a pan. Cook potatoes on low heat until golden, season with salt, pepper and parsley.

Heat remaining butter in a another pan and brown sausages on all sides on low heat.

Rinse and pat dry tomatoes, slice and arrange on plates. Season with salt and pepper and drizzle with a little oil and vinegar.

4.

Fill potato mixture into potato shells and arrange together with sausages on tomato plates. Serve.
