1 tsp grated Horseradish (fresh or from a jar)

4 Tbsps White vinegar
3 Tbsps olive oil
½ bunch Cress

Preparation steps

Cut sausage into slices. Rinse cucumber, cut in half lengthwise, remove seeds with a spoon and cut crosswise into thin slices. Rinse, trim and cut scallions crosswise into rings. Rinse, core and cut tomatoes into eighths.

To make dressing: Mix horseradish with salt and pepper to taste, vinegar and olive oil. Toss salad ingredients with dressing, let stand briefly, and serve sprinkled with cress.
