For the salad
300 grams Bologna sausage
100 grams Emmentaler cheese
1 bunch scallions
1 Red Bell pepper
1 small Cucumber
1 bunch Chives
For the marinade
2 Tbsps Wine vinegar
3 Tbsps vegetable oil

Preparation steps

For the salad, peel sausage and slice thinly. Remove rind from cheese and cut into narrow strips. Trim scallions, rinse and cut into thin rings.

Cut bell pepper in half, remove seeds, and cut into long strips. Rinse cucumber and slice into thin pieces. Rinse chives and cut into rolls.

3.

Mix salad ingredients in a bowl. For the marinade, mix oil and vinegar with a whisk until combined and season with salt and pepper. Drizzle over the salad and serve with bread and butter, if desired.
