- 200 grams Bologna sausage
- 8 small sprigs rosemary
- 1 red Bell pepper
- 1 yellow Bell pepper
- 1 Zucchini
- 4 Tomatoes
- 1 onion
- 1 garlic clove
- 4 tsps olive oil
- salt
- freshly ground pepper
- organic Lemon peel
Preparation steps

Slice the sausage into 8 pieces. Rinse the rosemary and shake dry. Thread each sausage slice on a rosemary sprig.

Quarter the red and yellow bell pepper, and remove the seeds and white ribs. Rinse the zucchini and tomatoes, and cut into pieces.

Peel and finely chop the onion and garlic. Heat 2 teaspoons of the olive oil in a nonstick skillet. Add the onion and garlic, and cook until translucent. Stir in the bell peppers, zucchini and tomatoes, and cook for 6-8 minutes. Season with salt and pepper to taste, and stir in the lemon zest.

Heat the remaining olive oil in a nonstick pan. Add the sausage and heat until cooked through. Season with pepper to taste. Serve with the vegetables.
