Preparation steps

1.

Rinse ribs and place into a pot with 1.2 liters (approximately 5 cups) of water. Bring to a boil, skim off any foam and simmer for about 1-1 1/2 hours on medium heat.

2.

Peel potatoes, carrots and onion. Cut potatoes and carrots into bite-sized pieces and chop onion into small cubes.

3.

Drain sauerkraut.

4.

Remove ribs from broth, set aside and cool. Loosen meat from the bones and cut into small pieces.

5.

Heat butter in a saucepan and saute onion until translucent. Add potatoes, carrots and sauerkraut and saute briefly. Add meat stock and spices and simmer for about 25 minutes on medium heat.

6.

Add meat and season with pepper. Pour into bowls and serve.
