Preparation steps

1.

Rinse ribs and cover in a pot with 1.2 liters (approximately 5 cups) of water. Bring to a boil, skim off foam as it forms and allow ribs to simmer over medium heat for about 1-1 1/2 hours.

2.

Meanwhile peel potatoes and onion, chop potatoes into chunks and chop onions into small pieces.

3.

Rinse and drain herbs.

4.

Remove ribs from the broth, set aside and let cool. Then loosen meat from the bones and cut into small pieces.

5.

In a saucepan melt butter and cook onion until soft. Add potatoes and sauerkraut, sauté briefly and deglaze with meat stock. Add spices and simmer for about 25 minutes over medium heat.

6.

Add meat into the soup, season the soup with salt and pepper and serve in hollowed out loaves, garnished with a bay leaf.
