400 grams mild Sauerkraut
1 shallot
3 Tbsps apple cider vinegar
salt

1 pinch sugar
4 Tbsps Corn oil
3 small Apple
2 Tbsps lemon juice
1 Red onion
150 grams Smoked salmon (in slices)
150 grams smoked trout
Dill (with flowers, for garnish)

Preparation steps

1.

Drain sauerkraut well. Place in a bowl and separate with a fork. Peel and finely chop shallot. To make salad dressing: Whisk vinegar with salt, pepper, and a pinch of sugar to taste. Gradually whisk in oil until emulsified. Mix dressing with chopped shallot and sauerkraut.

Rinse apples, quarter and remove cores. Cut one apple into small cubes. Slice other apples and sprinkle with lemon juice. Mix apple cubes with sauerkraut. Peel onion and slice into rings. Cut both types of smoked fish into bite-sized pieces.

3.

To serve, arrange sauerkraut on a plate or in a bowl. Top with onion rings and apple slices and garnish with dill sprigs and flowers.
