1 Russet apple
4 Tbsps lemon juice
1 Red Bell pepper
3 scallions
3 Tbsps vegetable oil
3 Tbsps Sunflower seed

Preparation steps

1.

Peel apple, cut into quarters, remove core and cut into slices. Immediately sprinkle with 2 tablespoons of lemon juice. Pull sauerkraut apart with two forks, mix in a bowl with apple slices. Rinse bell pepper, cut in half, remove seeds and ribs and finely chop.

Rinse scallions, trim and cut into thin rings. Add diced bell peppers to the bowl, stir, add remaining lemon juice and oil and season with salt and pepper. Toss salad. Toast sunflower seeds in a dry skillet. Sprinkle sunflower seeds over salad and serve.
