1 tsp lemon juice
1 Tbsp soy sauce
1 Tbsp vegetable oil
For Salad
70 grams baby Spinach
200 grams Strawberries
250 grams small Grape (purple)
200 grams ripe Feta
1 onion (red)
2 Tbsps Balsamic glaze

For Baked Potato
600 grams small potatoes
2 Tbsps vegetable oil
salt
peppers

Preparation steps

1.

Rinse and halve potatoes. Place on baking sheet, season with salt and pepper, drizzle with oil and toss. Turn potatoes cut side down and bake in preheated oven at 200°C (approximately 400°F) for about 30 minutes.

Rinse salmon, pat dry and drizzle with lemon juice and soy sauce, marinate for at least 5 minutes. Brush with oil. Heat oil in a pan and cook salmon until crispy on both sides.

Rinse spinach and shake dry. Rinse, dry, hull and slice strawberries. Rinse grapes, cut in half, remove seeds. Peel onion and cut into half rings. Crumble feta. Combine all salad ingredients and marinate in balsamic sauce.

4.

Arrange fish and salad on plates. Serve immediately with baked potato.
