200 grams lamb's lettuce
1 small Mango
1 shallot
2 carrots
1 Tbsp butter (15 grams)
100 milliliters Orange juice
2 turkey breasts (250 grams)
salt
white peppers
2 Tbsps Canola oil
1 tsp honey
1 tsp grainy Mustard

Preparation steps

1.

Rinse and spin dry lettuce. Peel mango and cut pulp into slices.  

2.

Peel shallot and dice finely. Peel carrots and cut into thin slices.

3.

Heat butter in a pan. Saute shallot on medium heat. Add carrots and orange juice and simmer, covered, for about 10 minutes on low heat.

Rinse turkey breast fillets under cold water and pat dry. Season with salt and pepper. Heat oil in a pan. Cook meat for about 2 minutes per side or until light brown.

5.

Whisk honey with mustard, brush meat with the mixture. Remove from heat and let simmer in pan for about 5 minutes. 

6.

Mix mango with carrots, season with salt. Arrange lettuce on plates and top with mango mixture. Cut turkey breast into strips and place on top. Serve.
