- 1 Mango
- 2 red onions
- 250 grams turkey breasts
- 4 tomatoes
- 1 teaspoon Sambal oelek
- 2 tablespoons Orange juice
- 3 tablespoons white balsamic vinegar
- 1 tablespoon honey
- 5 tablespoons olive oil
- 1 Avocado
- Chervil (or parsley, for garnish)
Rinse the two lettuces and tear the leaves into small pieces. Mix and spin dry. Peel the mango and cut the flesh from the core. Cut into slices. Peel, halve and cut the onion into thin strips. Rinse the tomatoes and cut into quarters, remove the seeds and finely chop.
Whisk the Sambal Oelek, the orange juice, vinegar, honey, and 4 tablespoons of olive oil. Season with salt and pepper.
Rinse the turkey and pat dry with paper towels. Season with salt and pepper and fry until golden brown, about 6-8 minutes in a pan with the remaining oil. Remove from pan, let rest briefly and cut into slices.
Cut the avocado in half and remove seed. Peel the halves and cut the flesh into slices.
To serve: Mix the lettuces, mango, onion, tomatoes, avocado, and turkey with the dressing and serve garnished with chervil (or parsley).
