200 grams broad Beans

250 grams mixed Lettuce (Arugula, spinach; Lollo rosso and bionda)
200 grams Berry (Heidelberg, currants and raspberries)
1 Red onion
400 grams Halloumi cheese
5 Tbsps olive oil
freshly ground peppers
2 Tbsps apple cider vinegar
2 Tbsps balsamic vinegar
1 Tbsp lemon juice
1 tsp honey

Preparation steps

Trim the beans, rinse and blanch for 6-8 minutes in salted water. Rinse in cold water, drain and cut into small pieces. Rinse the lettuce, spin dry and pluck small. Rinse the berries and halve the raspberries. Peel the onion, halve and thinly slice. Cut the halloumi into slices and cook in a lightly oiled grill pan (or on hot grill) on both sides for 3-4 minutes. Season with salt and pepper.

For the dressing, mix the two vinegars with the lemon juice, honey, 1-2 tablespoons water and remaining oil and season with salt and pepper.

Distribute the lettuce with beans, onions and berries on plates, put the cheese on top and serve drizzled with the dressing.
