40 grams Pine nuts
250 grams Raspberries
2 Tbsps Raspberry vinegar
1 tsp sugar
6 Tbsps olive oil

200 grams Gorgonzola

Preparation steps

1.

Rinse and spin dry spinach. 

2.

Toast pine nuts in a dry pan until golden brown.

3.

Clean raspberries, set some aside for garnishing and puree the rest briefly with raspberry vinegar, sugar and 4 tablespoons of olive oil. Season with salt and pepper.

4.

Arrange spinach leaves with raspberries and pine nuts on plates, crumble Gorgonzola coarsely over salad and drizzle with the dressing. Serve.
