150 grams Quark
50 milliliters Whipped cream

Preparation steps

1.

Soften the gelatin in cold water. Rinse the currants in a sieve and then pluck from the stems. Bring the currants along with 60 grams (approximately 1/3 cup) of sugar to boil in a pot and cook for about 5 minutes over low heat. Strain through a fine sieve and collect the juice.

Squeeze the gelatin and dissolve in the hot juice. Pour into 4 glasses and solidify in the refrigerator for about 2 hours. In the meantime, rinse the remaining berries and pat dry with paper towels. Cut strawberries in half.

Rinse the rosemary, shake dry and chop the leaves. Stir rosemary with the goat cheese, quark, cream and remaining sugar until smooth. Scoop into the glasses and garnish with remaining berries and fresh rosemary.
