- 250 baby Spinach
- 200 grams Taleggio cheese
- 100 grams pecorino romano
- 1 pomegranate
- 12 Gooseberry
- 2 Tbsps balsamic vinegar
- 4 Tbsps olive oil
- ½ tsp Mustard
- salt
- freshly ground peppers

Preparation steps
1.
Rinse the spinach, spin dry and remove any large stems.
2.
Cut the cheese into small cubes.
3.
Cut the pomegranate in half and remove the seeds.
4.
Rinse the gooseberries, pat dry and cut in half.
5.
Whisk together the balsamic vinegar, olive oil and mustard until smooth. Season with salt and pepper.
6.
Toss the salad ingredients together in a large bowl. Drizzle with the dressing, mix until well coated and transfer to serving bowls.
