8 medium sized Artichoke
salt
1 lemon (juice)
200 grams Mixed green Lettuce (such as spinach, frisee lettuce, iceberg)
1 handful Edible flowers (such as Meadow Bellflower)
4 Tbsps apple cider vinegar
4 Tbsps sunflower oil
freshly ground peppers
1 pinch sugar
60 grams Parmesan

Preparation steps

1.

Rinse artichokes. Remove outer leaves and cut away tough tips. Cut in half. Place in boiling salted water along with lemon juice and cook for 6-8 minutes. Remove from heat and drain.

Rinse lettuce, trim, spin dry and pluck into small pieces. Trim flowers and add all prepared ingredients to a bowl.

3.

For the dressing, mix vinegar with oil and season with salt, pepper and sugar. Drizzle over salad and serve with sliced Parmesan.
