- 8 medium sized Artichoke
- salt
- 1 lemon (juice)
- 200 grams Mixed green Lettuce (such as spinach, frisee lettuce, iceberg)
- 1 handful Edible flowers (such as Meadow Bellflower)
- 4 Tbsps apple cider vinegar
- 4 Tbsps sunflower oil
- freshly ground peppers
- 1 pinch sugar
- 60 grams Parmesan

Preparation steps
1.
Rinse artichokes. Remove outer leaves and cut away tough tips. Cut in half. Place in boiling salted water along with lemon juice and cook for 6-8 minutes. Remove from heat and drain.

Rinse lettuce, trim, spin dry and pluck into small pieces. Trim flowers and add all prepared ingredients to a bowl.
3.
For the dressing, mix vinegar with oil and season with salt, pepper and sugar. Drizzle over salad and serve with sliced Parmesan.
