1 kilogram Artichoke
2 lemons (juiced)
2 garlic cloves
100 milliliters olive oil
salt
freshly ground peppers
½ handful Basil

Preparation steps

Clean artichokes, rinse and remove hard outer leaves, cut stem and peel, cut artichokes into quarters. Drizzle artichoke pieces with some lemon juice. Press unpeeled garlic cloves with the heel of your hand.

Heat 2-3 tablespoons of olive oil in a pan and saute artichokes for a few minutes. Add garlic and season with salt and pepper. Deglaze pan with 250 ml (approximately 1 cup) of water. Cover and cook on medium heat for 10-15 minutes or until tender. Open and let cool, remove garlic.

Rinse basil, shake dry and cut into fine strips. Whisk the rest of oil with remaining lemon juice and basil, season with salt and pepper. Combine drained artichokes with marinade and let stand for 30 minutes. Serve.
