1 kilogram starchy potatoes
6 Tbsps Pastry flour
4 Tbsps cornstarch
salt (and pepper)
1 sprig Sage
100 grams butter

Preparation steps

Rinse the potatoes and cook in a pot of salted water for 20 minutes. Drain, cool, peel and press twice through a ricer.

Combine the flour with the cornstarch and season with salt and pepper. Add to the potato and knead on a floured work surface. Form the dough into inch-thick rolls and cut them into about 1 cm pieces (approximately 1/2 inch).

Cook the potato pasta in plenty of salted water and simmer over medium heat until the noodles float to the surface. Lift out, rinse cold and drain.

Pluck and rinse the sage leaves and cut into narrow strips. Heat the butter in a pan and saute the sage. Add the potato pasta and brown on all sides while stirring.

Serve hot.
