400 grams Tagliatelle
5 Sage
olive oil
salt
freshly ground peppers
6 Tbsps freshly grated Parmesan

Preparation steps

1.

Cook the tagliatelle in plenty of salted water until al dente. Drain, but save the pasta water.

2.

Cut the sage leaves into thin strips. Heat 3-4 tablespoons of oil in a small pan. Gently fry the leaves and then remove the leaves once crisp. Be careful the oil doesn't get too hot.

3.

Mix the noodles with the oil the sage was fried in and 1-2 tablespoons of the pasta water. Mix with an abundant amount of coarsely ground pepper and plenty of grated Parmesan. Serve immediately on a plate.
