22 ozs Rutabaga
1 egg
1 ¾ ozs Whole Grain Spelt Flour (3 TBSP.)
salt
½ organic lemon (shell)
Nutmeg
5 Tbsps Canola oil
2 chicory
1 Tbsp honey
¾ oz butter (1 TBSP.)
2 Tbsps white balsamic vinegar
5 ozs Taleggio cheese
2 sprigs thyme
peppers
2 Tbsps Elderberries- Jam

Preparation steps

1.

Peel, wash and grate the rutabaga. Mix in a bowl with egg, flour, salt, lemon zest and freshly grated nutmeg.

Heat 3 tablespoons of oil in a frying pan. Using a tablespoon, place small blobs of the mixture in the pan, flatten and fry for 4-5 minutes on each side until golden brown.

Meanwhile, clean, wash and quarter chicory lengthwise. Heat remaining oil in a frying pan. Sauté chicory in it over medium heat for about 6 minutes until golden brown all over. Drizzle with honey, swirl in butter and cook over medium heat until lightly caramelized, 4 minutes. Remove from heat and drizzle with balsamic vinegar.

Cut the Taleggio into slices. Wash thyme and shake dry. Remove Rösti from pan, drain, arrange on a platter with chicory and cheese. Sprinkle Rösti with pepper and garnish with elderberry jam and thyme.
