Olive oil is not only good for the heart and blood vessels, the oleocanthal from the oil can also reduce inflammation. You can even taste the polyphenol, which causes the typical scratching in your throat when you taste a high-quality olive oil.

You can enjoy the olive oil tomatoes with some bread as a light meal or you can serve it as an antipasti. It is also ideal as a party dish. Prepare it the day before, let it develop its full flavour overnight, and serve the next day with pasta and Parmesan cheese.
