1 Rinse tomatoes, pat dry and cut in half. Peel the garlic and cut in half.
2 Toast the bread slices until golden brown on both sides in a dry grill pan (or under a heated broiler).
3 Let bread slices cool slightly, then rub with the cut garlic. (If you like, cut the garlic into thin slices and reserve for garnish.)
4 Top bread with tomato halves, squeezing out pulp (or scooping with a spoon) so bread can soak up juices.
5 Season toasts with salt and pepper. Drizzle with olive oil, garnish with sliced garlic (if desired) and serve.
