6 Tbsps olive oil
2 garlic cloves
100 grams Parmesan (freshly grated)
6 Basil (coarsely chopped)
salt

4 slices Country bread

Preparation steps

1.

Pour 5 tablespoons oil into a large shallow dish and press in 1 clove of garlic. Mix well.

Rinse tomatoes, cut into slices, place on the oil and let sit overnight.

3.

To serve, brush bread slices with the remaining olive oil and toast until golden brown under the oven broiler, watching carefully. Remove from oven and rub with the remaining garlic clove.

4.

Drain tomatoes in a sieve and place on the bread slices. Season with salt and pepper and serve sprinkled with basil and Parmesan.
