- 800 grams Sirloin steak
- 2 Tbsps vegetable oil
- salt
- freshly ground peppers
- For the sauce remoulade
- 2 eggs (hard-boiled, finely chopped)
- 1 onion (finely chopped)
- 1 Pickled cucumber (finely chopped)
- 2 egg yolks
- 1 tsp sharp Mustard
- 100 milliliters sunflower oil
- 1 tsp Caper (drained)

Preparation steps

Remove the meat from the refrigerator about 1 hour before cooking. Rinse, pat dry, season with salt and pepper and sear in 2 tablespoons hot oil on all sides. Remove from the pan, transfer to a rack set over a baking sheet and roast in a preheated oven at 100°C (approximately 200°F) for 60-70 minutes, or until cooked to your liking.

Then remove the meat from the oven, cover with foil and let rest for about 5 minutes. Cut into thin slices and season with salt and pepper.

For the remoulade sauce: Mix together the egg yolks and mustard. Slowly whisk in the oil until thick. Season with salt and pepper. Mix in the hard-boiled eggs, onion, cornichons and capers. Serve with the meat.
