Preparation steps

Preheat the oven to 200°C (approximately 400°F).

Cut the peaches crosswise at the stem, and then blanch in boiling water until the skin starts to peel. Remove with a slotted spoon, transfer to ice water bath, and peel. Halve, remove the seeds, and then place cut side up in a buttered baking dish. Brush the surface of the peaches with the honey. Crumble the meringues and sprinkle half over the peaches with the pistachios. Bake in the oven for 10-12 minutes.

Remove from the oven and transfer to plates. Garnish with the remaining meringue crumbles, mint, and a scoop of vanilla ice cream. Dust with powdered sugar.
