Roasting the watermelon makes for a delicious spin on the classic watermelon and feta flavor combination. Watermelon is a great source of vitamins A and C while the Feta cheese is a great source of protein and vitamin B-6.
This light and refreshing dish is the perfect appetizer for a summer barbecue!

- 2 Tbsps white balsamic vinegar
- 2 Tbsps lemon juice
- 6 Tbsps olive oil
- 1 tsp honey
- 1 tsp hot Mustard
- crushed Red pepper flakes (ground)
- 14 ozs Watermelon (cut into approx. 1/4)
- 3 cups salad (e. g. chicory, arugula, leafy green, spinach)
- 1 ⅓ cups Feta (sliced)

Preparation steps
1.
Whisk together the vinegar, lemon juice, 4 tbsp oil, the honey and the mustard, and season to taste with sea salt and chilli.
2.
Drizzle the watermelon with the remaining oil. Season lightly with salt and grill on a hot barbecue or griddle pan on both sides for 4-5 minutes.
3.
Mix the salad leaves with the dressing and arrange on plates with the feta. Add the melon pieces and serve.
