Watermelon (0.8 kg)

Cilantro (1/2 bunch)
Mint (1/2 bunch)

Scallion (in thin rings)

Feta cheese (diced)

bright Soy sauce

Limes (Juice)

Ginger root (finely chopped)
Pepperoncini (1 tablespoon red, green and yellow, finely chopped)
freshly ground Pepper

Preparation steps

1.

Cut the flesh from the watermelon rind, remove the seeds and dice the flesh. 

2.

Rinse the arugula and herbs, shake both dry and pluck the herb leaves from their stems.

3.

Rinse the radishes and thinly slice.

4.

In a bowl, whisk together the olive oil, sesame oil, soy sauce, lime juice, ginger and pepperoncini. Season with salt, pepper and a pinch of sugar and whisk to combine. Add the arugula, herbs, melon, radish, scallions and feta and toss to combine.
