Watermelon and Arugula Salad with Feta
- 1 Watermelon (0.8 kg)
- 1 bunch Arugula
- cilantro (1/2 bunch)
- mint (1/2 bunch)
- 6 Radish
- 1 scallion (in thin rings)
- 100 grams Feta (diced)
- 5 tablespoons olive oil
- 1 tablespoon sesame oil
- 1 tablespoon bright soy sauce
- 2 Limes (Juice)
- 20 grams ginger (finely chopped)
- Pepperoncini (1 tablespoon red, green and yellow, finely chopped)
- freshly ground peppers
Cut the flesh from the watermelon rind, remove the seeds and dice the flesh.
Rinse the arugula and herbs, shake both dry and pluck the herb leaves from their stems.
Rinse the radishes and thinly slice.
In a bowl, whisk together the olive oil, sesame oil, soy sauce, lime juice, ginger and pepperoncini. Season with salt, pepper and a pinch of sugar and whisk to combine. Add the arugula, herbs, melon, radish, scallions and feta and toss to combine.
