- 1 slice white bread
- 1 Tbsp butter
- 1 handful baby Spinach
- 1 Ciabatta
- 1 Chicken breast
- 1 Tbsp balsamic vinegar
- 1 Tbsp olive oil
- salt
- freshly ground peppers
- 2 Tbsps Crème fraiche
Preparation steps

Remove crust from white bread, cut into cubes and fry in a pan with melted butter, dry on absorbent paper towel.

Rinse spinach, trim and spin dry.
3.
Halve ciabatta lengthwise and toast lightly in the oven.
4.
Season chicken fillet with salt and pepper. Heat olive oil in a pan and fry chicken on each side for about 4 minutes, deglaze with vinegar, then remove chicken and keep warm. Stir creme fraiche into the pan, heat and season with salt and pepper.
5.
Cut chicken into small pieces. Spread chicken, croutons and spinach on the bottom half of ciabatta, cover with creme fraiche and top with remaining ciabatta. Serve.
