- 8 Cape gooseberries
- 4 Tbsps cream cheese
- 2 Tbsps grated Horseradish (jarred)
- 2 Tbsps lemon juice
- salt
- peppers
- 4 slices Whole Wheat Toast
- 4 slices Roast beef

Preparation steps

Rinse and dry the arugula. Cut in hlf or into small pieces. Peel the cape gooseberries. Mix the cream cheese with the horseradish and lemon juice. Season to taste with salt and pepper. Toast the bread until golden brown. Spread the cream cheese over the toasted bread.

Top 2 slices of the bread with the arugula. Place the roast beef over the arugula, then top with the gooseberries. Top with the remaining 2 slices of bread, and gently press down. Halve diagonally, and serve.
