1 Tbsp olive oil
2 onions (finely chopped)
180 grams Tomato paste
4 Tbsps apple cider vinegar
100 milliliters white wine
1 tsp medium hot Mustard
100 milliliters Worcestershire sauce
1 Tbsp mixed, chopped Fresh herbs (Parsley, rosemary, thyme)
4 Tbsps liquid honey
2 chopped garlic cloves
1 kilogram Roast beef

Preparation steps

Heat oil in a casserole dish and saute onions for 3-4 minutes over medium heat until translucent. Stir in tomato paste and vinegar. Bring to a boil and cook for about 2 minutes while stirring. Add white wine, mustard, Worcestershire sauce, herbs, honey and garlic. Reduce heat and simmer for 15 minutes.

Stir again, pour into a bowl and cool. Preheat oven to 200°C (approximately 400°F). Rinse meat, pat dry, roll up and tie with kitchen twine. Place in a greased roasting pan and top with sauce. Roast for 45-50 minutes, occasionally turning and brushing with sauce. Remove, slice and serve.
