- 63 ozs Beef brisket
- salt (to taste)
- freshly ground Black pepper (to taste)
- 1 tsp garlic powder
- 1 cup Barbecue sauce (plus extra to serve)
- 1 cup water
- 8 day-old Bread roll
- For Onion Rings
- 4 large onions (peeled and cut into 1/2-inch slices)
- 2 cups unbleached all-purpose flour
- 4 cups Buttermilk (well shaken)
- 2 tsps Baking powder
- 2 Tbsps granulated sugar
- salt (to taste)
- Peanut oil (for frying)
- Ketchup for serving (if desired)

Preparation steps

Preheat oven to 325ºF / 160ºC.

Rinse the brisket under cold running water and pat completely dry with paper towels. Sprinkle both sides with salt, pepper and garlic powder. Place brisket in a large roasting pan with a cover.

Cook covered without water for 3 hours. Remove brisket from oven and slice. Return slices to pan. Combine barbecue sauce and water and our over sliced beef, cover, and cook 1 hour longer.

Divide the sliced brisket among the rolls. Drizzle with barbecue sauce and serve with onion rings.

Separate sliced onions into rings. Set aside.

In a large bowl, whisk flour, buttermilk, baking powder, sugar, and salt together until smooth.

Pour about 2-inches of oil into a Dutch oven. Heat oil to 375º F.

Working in small batches, dip onion rings in batter and coat well. Fry a few onion rings at a time, until golden brown. Drain on paper towels.
10.
Season to taste with salt and serve immediately.
