1 handful Seaweed
600 milliliters milk
1 Vanilla bean
40 grams sugar
250 grams Rhubarb
2 Tbsps powdered sugar
1 splash Cider

Preparation steps

Soak the gelatin in 3 1/2 tablespoons cold water. Bring the milk, split vanilla bean and sugar to a boil. Remove from the heat and let cool slightly. Add the gelatin and stir until melted. Strain through a fine-mesh sieve into 4 serving bowls. Let cool then chill for at least 3 hours.

Rinse the rhubarb, trim and cut into 2-3 cm (approximately 1 inch) long pieces. Caramelize the sugar, add the rhubarb, deglaze the pan with the cider and simmer for 1-2 minutes, until just tender. Remove from the heat. Distribute over the panna cotta before serving.
