Red Berry Jam
Rinse the berries and the cherries. If using strawberries, trim and cut into small pieces. Remove the currants from the vine, if using. Remove the stems and the stones from the cherries. Mix the sugar (minus 2 tablespoons) with the gelling agent and the fruit. Bring the mixture to a boil, stirring constantly. Add the remaining sugar, return to a boil, and cook for 1 minute. Fill the prepared jars to the brim with the jam and seal tightly.
