21 ozs fresh Raspberries
7 Tbsps sugar
1 Tbsp lemon juice
2 egg whites

Preparation steps

1.

Rinse raspberries, pat dry and place 3.5 ounces aside. Mix remaining raspberries with sugar and lemon juice and puree.

Beat egg whites until stiff and fold into the raspberry puree.

Pour the sorbet mixture into a shallow metal tray, cover, and freeze for at least 3 hours. Stir every 30 minutes with a fork to prevent ice crystals.

Place sorbet into glasses and garnish with remaining raspberries. Serve.
