Ingredients

For the sorbet
200 grams sugar
250 grams frozen Raspberries
2 Tbsps lemon juice
300 milliliters Sparkling wine
For garnish

Preparation steps

Combine the sugar with 200 ml (approximately 3/4 cup) of water and simmer for about 15 minutes, then cool. Thaw the raspberries and set some nice berries aside for garnish. Puree the remaining berries with the lemon juice puree and then strain through a fine sieve and mix with the sparkling wine and sugar syrup. Pour into a shallow metal bowl. Freeze for at least 4 hours, stirring frequently with a fork to prevent the formation of large ice crystals. (Or finish in an ice maker).

To serve, scoop the sorbet into bowls and garnish with raspberries and mint.
