- 2 tsps olive oil
- 1 red Bell pepper (seeded and cut into strips)
- 1 large onion (peeled and diced)
- 3 garlic cloves (peeled and crushed)
- 350 grams cooked chicken (cut into bite-size pieces)
- 450 grams cooked Mixed seafood (thawed, if frozen)
- 75 grams frozen Peas (thawed)
- 250 grams cooked Long grain rice
- crushed Saffron
- ½ tsp allspice (or paprika or chili powder)
- 150 milliliters fish or chicken stock
- lemons (for garnish)

Preparation steps

Heat the olive oil in a large frying pan. Add the bell peppers and cook for 2 minutes. Add the onions and garlic, and cook until browned, about 4 minutes. Add the saffron and allspice, and cook, while stirring, until fragrant, about 1 minute. Add the chicken, stock and peas, and simmer for 1 minutes. Add the mixed seafood and rice, and cook over medium heat until warmed through, about 3 minutes. Garnish with lemon slices before serving.

Serve the paella with a crisp salad or crusty bread if desired.
