1 kilogram Pumpkin
6 organic Oranges
½ tsp Ground cinnamon
1 kilogram jam sugar (1:1 ratio)

Preparation steps

Rinse and halve the pumpkin. Remove the seeds and the hard outer shell. Finely dice the pulp. Rinse the oranges in hot water. Remove the zest from 2 of the oranges in strips. Julienne the zest, and squeeze the juice from all of the oranges.

Add the juice, 100 ml (approximately 3 ounces) of water, and the diced pumpkins to a pan. Bring to a boil. Reduce the heat to medium, and cook for 15-20 minutes until tender. Puree the mixture, then add the orange zest, cinnamon, and the sugar. Bring to a boil, and cook for 4 minutes, stirring constantly.

Pour into prepared jars and seal tightly. Turn upside down to cool for 10 minutes. Turn right side up, and store in a cool, dark place.
