200 grams Kumquat
1 kilogram jam sugar (1:1 ratio)
½ teaspoon cinnamon

Preparation steps

Halve the pumpkin and remove the seeds and stringy fibers. Peel the shell, and cut the pulp into cubes. You should have about 800 g (approximately 28 ounces) of pulp remaining. Add the pumpkin and the orange juice to a large saucepan. Cover and cook over medium heat for 15-20 minutes, until tender. Rinse the kumquats in hot water and cut into slices. Add the kumquats to the pot when there is 5 minutes of cook time left. Puree the mixture completely.

Add the cinnamon and the sugar to the puree. Cook for 4 minutes, stirring constantly, until thickened. Fill the prepared jars to the brim with the jam. Seal tightly and turn upside down to cool for 10 minutes. Turn right side up and cool completely. Decorate the jars with cinnamon sticks, and velvet ribbons if giving away as a gift.
