Pumpkin Spice Jam
Peel the pumpkin and remove the seeds. Dice the pulp into small cubes. You should have about approximately 36 ounces. Squeeze the lemon and orange.
Add the lemon juice, orange juice, apple juice, ginger, and pumpkin to a pot. Bring to a boil, stirring occasionally. Cook for about 20 minutes until the pumpkin is soft, but not falling apart. Stir in the jam sugar, and cook for 4 minutes.
Fill the jam into prepared jars and seal immediately.
